Sometimes I wake up and feel like making an all out brunch complete with biscuits and gravy, vegan sausage, a fruit platter, pancakes, and mimosas. That’s not most of the time though. Most often, I want breakfast to be my easy meal. I can make it quickly and without much thought. Then I can eat it and sip my coffee while my mind wakes up and gets ready to tackle the rest of the day.
This peach compote fits the bill. It can be served warm on waffles, pancakes, and even oatmeal. If you have time, I always recommend fresh waffle iron waffles, but sometimes we aren’t afforded all of that time. This works just fine on the freezer kind too. I promise.
- 2 cups frozen peaches
- 1/4 cup sugar
- 2 tsp lemon juice
- 3 tbsp water
Combine peaches, sugar, lemon juice, and water in a small saucepan. Bring to a boil over high heat, stirring frequently to make sure nothing burns.
Once the compote reaches a boil, reduce heat to medium and cook for about 10-12 minutes, until the compote has thickened and the peaches are heated through. Serve warm.
