You catching a theme here? Summer makes me think of strawberries. And now that summer is in full swing, all I want is strawberries and a chilled meal to keep me cooled off. Thankfully, this strawberry avocado pasta salad meets both of those requirements.
When I was concocting this recipe, I just kept adding strawberries.
The more, the berry-er, eh?
Strawberry Avocado Pasta Salad
The ultimate summer berry pasta salad to keep you feeling cool and refreshed
Pasta Salad Base
- 1 16 oz box of your favorite pasta
- 1 pint quartered strawberries
- 1 red onion thinly sliced
- 1/2-1 bunch cilantro destemmed
- 1 medium hass avocado
- salt and pepper
Strawberry Balsamic Vinaigrette Dressing
- 1 cup quartered strawberries
- 2 tsp agave
- 2 tbsp balsamic vinegar
- 3 tbsp olive oil extra virgin
Cook pasta according to package instructions, drain, and set aside
In a large mixing bowl, combine the pasta, strawberries, red onion, and as much cilantro as you would like. If this isn't being served immediately, cover the pasta salad base and store at this step.
To create the dressing, combine the dressing ingredients into a blender or food processor and blend until smooth. Adjust the flavor to taste, adding more agave for a sweeter taste or more balsamic vinegar for a tang.
When reader to serve, add diced avocado and drizzle dressing on top. Season with salt and pepper to taste.
