Christmas is just one week away! Hopefully you’ve started your shopping by now, haha. If not, you should probably walk away and come back to this once you’ve finished that task… or you can simply skip presents and bake cookies instead if that’s your thing.

Christmas kind of snuck up on me this year. It seems like Halloween was just yesterday and then WHAM! Out of nowhere comes Christmas. Between our basement renovation and keeping busy with all things pregnancy, I’m not as on top of my game this year as I usually am. I still have gifts to wrap and cookies to bake and final preparations before my family arrives in just a few days. Time is running out!

Alex and I are hosting our families for Christmas in Kansas City for the first time since we’ve been Mr. and Mrs. Long. We’ve already prepared the lunch/dinner/all-day-eating-event menu, but we couldn’t forget about breakfast!

I wanted something that just screamed Christmas and I really think I nailed this one. With an abundance of vegan eggnogs (Silk and Califia Farms have been my favorites of the ones I’ve tried) on the market, I wanted to incorporate that flavor into a more traditional breakfast.

Eggnog French Toast with Brown Sugar Streusel

Ingredients

French Toast Base

  • 1/3 cup soy milk
  • 1/4 cup olive oil
  • 1 cup vegan vanilla yogurt I chose to use Silk brand
  • 2 cups vegan eggnog Silk is my favorite brand for vegan eggnog
  • 1 loaf French or other thick bread, cubed mine yielded about four cups packed

Brown Sugar Streusel

  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup vegan butter melted

Instructions

  1. Preheat oven to 400°F

  2. Depending on your preference, spray a glass baking pan with nonstick spray. We used an 8'x8' pan for a very moist French toast (my personal preference) and a 9'x13' pan for crispier French toast (Alex's preference).

  3. Combine soy milk and olive oil to make a heavy cream

  4. In a medium bowl, whisk together the heavy cream mixture, vanilla yogurt, and eggnog

  5. Add the bread to your prepared pan and pour over the cream, yogurt, and eggnog mixture. Stir well so that all of the bread is covered by the mixture and none is left dry. 

  6. In a separate bowl, stir together the remaining ingredients to make your streusel. Sprinkle this topping over the bread mixture.

  7. Bake at 400°F for 45 minutes.
