It almost feels like cheating to even call this a recipe, but I whipped up this spicy vegan slaw the other night and added it to my agave lime cauliflower tacos. It was the perfect mix of spicy and sweet and I felt it would be selfish not to share with all of you. The cauliflower tacos are still being refined, but this spicy coleslaw is ready to be shared with you all. 

Speaking of tacos, I’m working on something exciting for you all. I can’t share all the details quite yet, but know that there is a taco book in the works. That means gathering data (taste-testing) and coming up with creative recipes for all of you. If you have any taco ideas you’d like to see, please let me know in the comments below. 

No idea is too wild! Think mac & cheese tacos, chick’n & waffles tacos, apple pie tacos. Basically anything that can go into a tortilla is going into a tortilla. I’d love to hear your ideas. 

Spicy Vegan Coleslaw

Course Side Dish
Prep Time 5 minutes

Ingredients

  • 2 cups coleslaw mix (I chose a mixture of broccoli, lettuce, red cabbage, and shredded carrots)
  • 1/3 cup vegan mayo
  • 1 tsp hot sauce of choice
  • 2 tbsp lime juice
  • 1/3 cup cilantro chopped and packed
  • 2 green onions thinly sliced

Instructions

  1. Combine mayo, hot sauce, and lime juice in a small blender. Blend until well combined.

  2. Add chopped cilantro and green onions and whisk together until incorporated

  3. Pour dressing over slaw mixture and stir until dressing covers the slaw
