Alex and I have had some very hit-or-miss experiences with store-bought dairy-free cream cheese. Sometimes, it’s perfectly smooth and spreads well. Other times, something happened in transportation where the cream cheese was clearly frozen and then thawed and it has messed up the texture completely. Talk about a bummer when I go to get the cream cheese out of the fridge for my waffles and it’s got this watery layer on top and won’t spread.
We got tired of playing the cream cheese lottery every time we bought from our local grocery store, so I decided to make our own. I could play quality control inspector that way and make the texture and flavor just right.
But then I asked myself, “why stop at plain cream cheese? Why not jazz it up a bit?”
That’s where this idea was born.
I don’t know about you, but when I’m having cream cheese, it’s most often on a bagel. More specifically, it’s most often on an everything bagel. Why be plain when you can have a flawless blend of garlic, onion, poppy seeds, sesame seeds, and salt?
Y’all see this little dude? I almost didn’t get to share this recipe with you all because our little bee friend wanted to keep it all to himself. I would shoo him away from the table on my porch where I was taking pictures, but he kept coming right back, trying to sneak just the teeniest of nibbles. That picture alone should tell you how good this recipe is. Silly little bee!
To take your bagels to bae-goals, I present to you this creamy everything bagel cream cheese spread.
Everything Bagel Cream Cheese
Inspired by delicious everything bagels, this vegan cream cheese is high in protein and flavor. Use it to top bagels, crackers, pita, or even pizza!
- 1/4 cup cashews (soaked overnight)
- 8 oz tofu (half block) pressed and drained
- 2 tsp poppy seeds
- 1 tsp sesame seeds
- 1 tsp minced onion
- 3/4 tsp coarse sea salt *
- 1/4 cup unsweetened nondairy milk
- 1 tbsp lemon juice
- 1 tsp apple cider vinegar
- 2 tsp nutritional yeast
Soak cashews and press tofu if you have not already
Add ingredients from cashews to sea salt to a food processor or high powered blender and blend until smooth
Add remaining ingredients and blend until smooth
*You can substitute 1.5 tbsp Trader Joe's Everything But The Bagel seasoning for items poppy seeds through sea salt if you have that on hand
