Coconut Lime Jackfruit

This vegan coconut lime jackfruit is served in a fresh and creamy sauce and is a flavorful option for a quick lunch, dinner, or meal prep recipe.

  • 1 tbsp coconut oil
  • 1 onion diced
  • 3 cloves minced garlic
  • 1 can jackfruit hard cores removed
  • 1 can unsweetened coconut milk
  • 2 tbsp lime juice
  • zest of 1 lime
  • 1 tbsp liquid aminos or soy sauce
  • 1/2 tsp ground ginger
  • 1/4 tsp pepper
  • 1/4 tsp salt or to taste
  • 1/4 cup chopped cilantro


  1. Heat coconut oil in skillet on medium heat. Once heated, add the onion and cook until translucent, stirring often. Add garlic and cook for 1 minute, stirring frequently so the garlic does not burn.

  2. Add jackfruit, stir, and cook for 3 minutes.

  3. Add remaining ingredients except for cilantro.

  4. Turn the heat to medium high and bring the dish to a boil. Bring back down to a bubbling simmer. Cook uncovered for 20 minutes until about half of the liquid remains.

  5. Remove from heat and stir in cilantro.

  6. Serve over rice or favorite grain.
